Mediterranean Tuna

Servings: 4
60 ml (1/4 cup) mayonnaise 60 ml (1/4 cup) plain yogourt
2 to 4 cloves garlic, minced
30 ml (2 tbsp.) fresh basil, finely chopped
2-170 g (6 oz.) cans white chunk tuna, drained
8 sun-dried tomatoes, cut in large pieces
12 Kalamata black olives, minced
1 green onion, finely chopped
8 slices POM Ultra-Moist Superclub White Sandwich bread
200 g (6 1/2 oz.) grated cheese
4 to 8 leaves red curly leaf lettuce

In a bowl mix the mayonnaise with the yogourt, garlic and basil, then add the tuna, sun-dried tomatoes, black olives and green onion. Place 4 lettuce leaves on 4 slices of bread, spread the tuna mix evenly over each slice, then top with shredded cheese and the 4 remaining lettuce leaves.
