Chicken and Apple Salad Pita

1 celery stalk, cut in chunks
1 red apple, cut in chunks
30 ml (2 tbsp.) mayonnaise
5 ml (1 tbsp.) lemon juice
2 skinless and boneless chicken breasts, cooked and cut in pieces
2 POM New York New York Pitas
2 slices cheddar cheese
2 leaves Romaine lettuce
Salt and pepper

Mix celery, pieces of apple, mayonnaise, lemon juice and chicken. Salt and pepper to taste. Cut pita bread in half. Fill with cheddar cheese slices, lettuce and chicken salad.

Health Tip: To add colour to your lunch, bring broccoli flowerets, multi-coloured pepper rings, and a plain yogourt-based dip, seasoned with coriander. Fruit juice will complete this antioxidant- and protein-rich lunch.
