Open Chicken Quesadillas
A delicious, easy- to-make dinner for family and friends during the busy holiday season.

6 POM White or Whole Wheat Tortillas (7"/17.5 cm)
1 tbsp olive oil
2 cloves garlic, minced
1 medium onion, chopped
2 small sweet red peppers, diced
1-1/2 lbs ground chicken
1 tsp cumin, optional
1 tsp dried oregano leaves
1/4 tsp salt
3/4 cup tomato pasta sauce
2 tbsp chopped fresh cilantro or parsley
1/2 cup sliced black olives, optional
1-1/2 cups shredded Monterey Jack cheese & cheddar salsa to serve

1. In large frying pan, heat oil on medium-high heat. Add garlic, onion and peppers. Sauté 5 minutes. Add chicken and seasonings. Cook, stirring occasionally until chicken is no longer pink, about 5 minutes. Stir in sauce, cilantro and olives. Heat through.

2. Place POM tortillas in single layer on baking sheet. Pile chicken mixture on tortillas leaving a 1/2" (1 cm) border. Sprinkle cheese on top.

3. Bake in preheated oven at 450°F (230°C) for 6 to 8 minutes or until crust is crisp and cheese is melted. Serve with salsa.

TIPS
1. Add sliced hot peppers or hot sauce to taste.

2. Use your favourite ground meat. Beef and turkey are great.

3. Use your favourite cheese.

4. Replace fresh cilantro with 2 tsp (10 mL) dried cilantro leaves.
