Black Forest Ham Tortilla

Servings: 4
60 ml (1/4 cup) butter, softened
15 ml (1 tbsp.) Dijon mustard
5 ml (1 tbsp.) fresh thyme, finely chopped
15 ml (1 tbsp.) fresh parsley, finely chopped
4 POM New York New York Tortillas
300 g (10 oz.) Black Forest ham, sliced
1 red onion, thinly sliced
200 g (6 1/2 oz.) Swiss cheese slices
2 large tomatoes, sliced

Mix the butter with the mustard, thyme and parsley. Spread the mixture on one side of the tortillas. Place the ham on two tortillas, sprinkle with red onion and top with cheese and tomato slices. Cover with the two remaining tortillas.
Cut in four wedges.
A delicious change! You can turn these tortillas into quesadillas by toasting the tortillas on each side in the oven or on the BBQ until the cheese is melted.
