Curried Chicken Wraps

If you are looking to impress.
Preparation Time: 25 minutes
Marinating Time: 1-3 hours
Cooking Time: 10 minutes
Servings: 8 wraps
8 POM SMART Tortillas (10"/25 cm)
1 lb boneless chicken breast
1/4 cup plain yogurt
2 tsp curry powder
1 cup baby spinach

1. Cut chicken into strips.
2. Combine yogurt, curry and chicken in small bowl. Mix well. Cover and let stand 1 to 3 hours.
3. Place chicken on baking sheet lined with parchment paper or aluminum foil.
4. Bake in preheated 400°F (200°C) oven for 10 minutes or until chicken is cooked through.
5. Wrap POM tortillas in foil and place in oven to warm for last 5 minutes while chicken is cooking.
6. Place chicken and spinach on top 2/3 of tortillas. Fold up bottom then roll from sides. Secure with a toothpick.
7. Serve with cucumber sauce.
TIPS
1. Prepare wraps on 4 (10"/25 cm) POM SMART Tortillas. Tuck both sides in and roll up from the bottom. Cut in half to serve.
2. Curry pastes are available in oriental stores and most major grocery stores.
3. Replace the fresh mint with 2 tsp (10 ml) of dried mint leaves.
