Crab Avocado Bites
Great for appetizers as well as quick weekday meals.

Preparation Time: 25 minutes
Cooking Time: 15 minutes
Servings: 40 dozen appetizers


10 POM SMART tortillas or POM Whole Wheat Tortillas
1/2 cup basil pesto
2-1/2 cups shredded Monterey Jack cheese
8 oz. crabmeat, fresh, frozen or canned
1 avocado, peeled, pitted and diced
1 tbsp vegetable oil
1 lime, cut in wedges

1. Spread pesto on half of the POM tortillas leaving ½" (1cm) border. Top with cheese, crab and avocado, dividing evenly. Place remaining tortillas on top. Press down lightly.

2. Heat half of the oil in a large frying pan on medium heat. Cook half of the quesadillas, turning once until browned on both sides and cheese is starting to melt. Repeat with remaining oil and quesadillas.

3. Cut each quesadilla into 8 triangles. Serve warm with lime wedges.

TIPS
1. Replace crab with cooked shrimp or lobster.

2. Basil pesto is available in supermarkets with the pasta sauces or prepared dips.

3. Use your favourite cheese. Mozzarella, Cheddar and Swiss all taste great.
