Chicken Asparagus Pitawich

Simple, healthy and delicious.
Preparation Time: 20 minutes
Servings: 6 sandwiches
6 POM Whole Wheat Pitas
4 oz. cream cheese, softened
1 tbsp dijon mustard
3/4 cup shredded cheddar cheese
6 large halves roasted red peppers
9 oz thinly sliced smoked chicken
12 asparagus spears, blanched and halved

1. In a small bowl, mix cream cheese and mustard until blended. Stir in cheddar cheese.
2. Cut POM pitas in half horizontally to make 2 rounds for each. Toast and spread cheese mixture evenly on bottom halves. Top with peppers, chicken and asparagus. Replace pita top. Cut in half to serve.
TIPS
1. Vary the meat to suit your taste. Ham, roast beef and salami are all good options.
2. If asparagus isn't available, try these alternatives; alfalfa sprouts, spinach leaves, watercress or shredded lettuce.
3. Try the same ingredients rolled in your favourite 7" (17.5 cm) POM Tortilla.
