Beef, Horseradish and Rosemary Pita

Preparation Time: 10 minutes
Servings: 4
150 ml (2/3 cup) mayonnaise
30 ml (2 tbsp.) horseradish
10 ml (2 tbsp.) fresh rosemary, finely chopped
454 g (1 lb.) cooked roast beef, sliced
1/2 English cucumber, quartered, then cut in approximately 6 mm. (1/4 in.) pieces
4 POM New York New York Pitas
200 g (6 1/2 oz.) cheese slices
4 to 8 leaves curly leaf lettuce
2 medium tomatoes, sliced

In a large bowl, mix the mayonnaise with the horseradish and rosemary. Set aside. Cut each pita bread in half to create a pocket. Fill with roast beef, cucumber, lettuce leaves, then cheese and tomato slices.
