Curried Chicken Salad Sandwich

8 slices of Bon Matin Flax Bread or
Flax Whole Grain Bread Bon
Matin GrainsEntiers

250 ml (2 cups) chicken, diced
1 green or red pepper, diced
125 ml (1/2 cup) fresh seedless red grapes, quartered
75 ml (1/3 cup) plain yogourt
2 ml (1/2 tsp.) curry
1 pinch cumin
Salt to taste

Mix the chicken, pepper and grapes. Add the yogourt and seasoning. Place a quarter of the mix between two slices of Bon Matin Flax Bread.

Less fat and less salt than the traditional ham and mustard on white… with the added bonus of more protein and vitamins!
