Toasted Tuna and Dried Tomato Pesto Sandwich

2 cans (180 ml/6 ounces) flaked tuna, drained
30 ml (2 tbsp) dried tomato pesto
1 red pepper, diced
4 slices of Bon Matin Multigrain bread
1 cup (250 ml) partly skimmed Mozzarella cheese, grated

Mix together the tuna, dried tomato pesto and the red pepper. Toast the bread. Spread a quarter of the tuna mix on each slice of bread, then cover with cheese. Place in the oven under the grill until the cheese is melted and lightly grilled.
