Bagel Sandwich with Eggplant Spread

3 Bon Matin No Fat, No Sugar Added, 100% Whole Wheat Bagels
125 ml (1/2 cup) store-bought eggplant and chick pea spread (babaganouj)
4 bocconcini cheese balls, drained and sliced
2 tomatoes, sliced
250 ml (1 cup) spring greens or curly leaf lettuce

Split the bagels and spread each half with 15 ml (1 tbsp.) of the Aubergine and chickpea spread. Layer with cheese slices, tomatoes and greens and cover with the other half.
